Start by patting the pork tenderloins dry with paper towels. This helps the seasoning stick better and allows the meat to brown nicely before slow cooking. In a small bowl, mix together the salt, pepper, paprika, thyme, rosemary, and onion powder. Rub the seasoning mixture evenly over all sides of the pork tenderloins. Ezoic Heat the olive oil in a large skillet over medium-high heat. Sear the pork tenderloins for about 2 minutes on each side until lightly browned. This step adds extra flavor and gives the pork a beautiful color. Place the sliced onions in the bottom of the crock pot. Add the seared pork tenderloins on top of the onions. In another bowl, whisk together the chicken broth, soy sauce, Worcestershire sauce, Dijon mustard, and minced garlic. Pour the mixture over the pork. Ezoic Cover the crock pot with the lid and cook on low for 6-7 hours or high for 3-4 hours. The pork should reach an internal temperature of 145°F and be tender and juicy. Once cooked, carefully remove the pork tenderloins from the crock pot and place them on a cutting board. Cover loosely with foil and let them rest for about 5 minutes before slicing. If you want to make a thicker gravy, pour the cooking liquid into a saucepan. Mix the cornstarch and water together in a small bowl to create a slurry, then whisk it into the liquid. Simmer for 3-5 minutes until thickened. Ezoic Slice the pork tenderloin into medallions and spoon the gravy over the top. Garnish with fresh parsley before serving.
