Ingredients

For The Spice Rub

  • ¼ cup of light brown sugar
  • 2 tablespoons of smoked paprika
  • 1 ½ tablespoon of onion powder
  • 1 ½ tablespoon of garlic powder
  • 1 ½ tablespoon  kosher salt
  • 1 ½ tablespoon ground black pepper
  • ½ tablespoon ground cayenne pepper (non-compulsory)

For The Grilled Ribs

  • 2 racks of baby back ribs (around 5 pounds to 6 pounds total)
  • 3 tablespoons of vegetable oil, and more for oiling the grates
  • ½ cup of chicken stock
  • ¼ cup of apple cider vinegar
  • 1 ½ cup of BBQ sauce

Instructions

  • Warm up the grill either using charcoal or gas to 300 degrees Fahrenheit and the coals or flames should be underneath one half of the grill.
  • For the spice rub; mix and blend the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper, and cayenne if used, all in a small bowl.
  • Get a large sheet tray and put the rack of ribs on it and then proceed to the detachment of the membrane from the underside of the ribs.
  • Spray the spice rub equally on both sides of the ribs and rub the vegetable oil.
  • With the curves of the bones facing down, put the ribs on the sheet tray and place the chicken stock and vinegar on the tray.
  • Then proceed to cover the tray firmly with aluminum foil and put it on the grill on top of the side with no flame or coal.
  • Using indirect heat, cook it till the ribs’ internal temperature reaches 180 degrees Fahrenheit to 190 degrees Fahrenheit, all of which should go on for about 1 hour 20 minutes to 1 hour 30 minutes.
  • Afterward, oil the grill grates properly and increase the temperature of the grill to 375 degrees Fahrenheit and then move the ribs directly to the grill grates and also use the BBQ sauce to whisk its tops.
  • Cook it for 5 minutes (covered) and then flip the ribs over carefully, proceeding to use the BBQ sauce to whisk its other side.
  • Then cover and cook it for another 5 minutes, consistently whisking and flipping the ribs over till the BBQ sauce has made a tacky overlay and has also gotten seared in spots which should take probably another 10 minutes to 20 minutes.
  • You can then get your cutting board, place the ribs on it, slice it into pieces and serve your perfect ribs.
