Ingredients
  

  • 1 Ib. 80/20 Ground Beef
  • 1 Ib. Hot Breakfast Sausage (Ground)
  • 1 Large Egg
  • ¼ Cup of Whole Milk (or Buttermilk)
  • ½ Cup of Cheese Cubes or 1 per Meatball
  • 1 Ib. of Thin Carved Bacon (Carve in half)
  • Original Rub
  • Original Sauce
  • Toothpicks

Instructions
 

  • The first step to this is to get a large bowl and mix all the ingredients in it till they are well-mixed.
  • Then proceed to form a meatball the size of a golf ball and compress it into a croquette. In its center, place a cube of cheese and adjust the meat around the cheese which you will then turn into a ball again.
  • Roll the meatball with the bacon strip around it after you have placed the meatball onto the bacon strip (half of it).
  • And, at the end of the bacon, you can push a toothpick through it and also into the center of the meatball as this is done to hold every single thing in place.
  • Afterward, get the original rub and spray it freely on top of the exterior part of the meatball wrapped with bacon.
  • And, you can then proceed to prepare the smoker. Put the meatballs straight on the smoker grate and leave them there for about 2 hours 30 minutes to 3 hours.
  • This is to continue till the center of the meatballs gets to 160 degrees Fahrenheit and then proceed to brush it with your original sauce while this should go on for 30 minutes.
  • And, to make the bacon crunchier, you are to remove them earlier (30 minutes early) and proceed to place them under a broiler. They are to be left there for about 3 minutes to 5 minutes but, be sure to check them against getting burnt.
