Ingredients
  

  • 3 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of lemon juice
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh parsley leaves
  • 4 (6 ounce) red snapper fillets
  • Spices: Smoked paprika, garlic powder, onion powder, and celery seed

Instructions
 

  • The first step is to clean the fish. You can do this by removing the gills and scales with a sharp knife. Don’t forget to cut the belly to remove the gills, intestines and all. Then you need to rinse the fish under cold running water, which will remove any remaining dirt or debris. Pat dry with paper towels before you start grilling.
  • You should also make sure that your grill is clean and oiled before you put the fish on it. Using a foil paper for the red snapper isn’t necessary so oiling your grill ensures that the fish doesn’t stick to the grill while cooking and gives it a nice crispy crust on the outside while staying moist inside.
  • Choose one of the spice combos and combine all of the ingredients (excluding the oil) with a generous teaspoon of salt in a big mixing bowl. Put the purée in a small mixing bowl, add in the oil and mix until well combined. Make 5 parallel 3-inch-long slashes on each side of the snapper, cutting almost all the way through to the bone to make it tender. Season the fish lightly with salt and use the paste to fill the slashes in the flesh. Now, rub the olive oil all over the fish.
  • After you must have oiled the grill, start by preheating a grill and preparing a grill basket that is large enough to contain the fish. Grill over moderate heat, flipping once, until the flesh is only flaky when tested with a fork, about 20 minutes. Remove from the grill and serve immediately. Using tongs, carefully lift the fish out of the basket and place it on a serving tray. Lift the fillets off the bones with two forks and place them on a serving plate.
