  • Begin by thoroughly drying the chicken wings on all sides using a paper towel. Then, place them into a zip-top bag.
  • Add the baking powder and salt to the wings inside the bag. Seal the bag securely and toss the wings to ensure they are evenly coated.
  • Preheat your smoker to 250 degrees Fahrenheit, using your preferred wood for smoking.
  • Once the smoker reaches the desired temperature, place the wings directly onto the grill grates. Close the lid and allow the wings to smoke for approximately 30 minutes.
  • Next, increase the heat in your smoker to 425 degrees Fahrenheit. Continue cooking until the internal temperature of the wings reaches 175 degrees Fahrenheit. Rotate or flip the wings as needed to promote even cooking and prevent hot spots on the grill.
  • Once the wings are fully cooked, remove them from the grill.
