  1. Cut your cheese into slices that are 1/2 inch thick. Because if you slice the halloumi too thinly, you run the risk of it splitting apart as you slice it, resulting in highly uneven pieces when you grill it.
  2. Place all of the halloumi slices in a single layer in a baking dish and drizzle some fresh lemon juice on it and a light coating of olive oil.
  3. Sprinkle some black pepper and salt to season the dish. Instead of oiling the grill pan, I like to oil the halloumi slices themselves. This is due to the fact that it aids in creating better contact between the cheese and the pan. If you merely oil the pan, the oil will flow off the ridges and settle in the grooves of the pan, which is not what you want. This generates a great deal of smoke.
  4. Bake for 30 minutes at 350 degrees.
